  • 1 1/2 tablespoons sun-dried tomato oil

  • 1 1/2 tsp Italian seasoning

  • 1/3 tsp smoked paprika
  • 1 tbsp Italian seasoning
  • 1/2 tsp salt
  • 2 tbsp shallots
  • 1 tbsp minced onion
  • 2 1/2 tablespoons tomato paste
  • 1/2 cup diced sun-dried tomatoes
  • 2 cups diced spinach
  • 2 tablespoons butter
  • 2 tablespoons minced garlic
  • 1 1/2 cups vegetable broth
  • One cup heavy cream
  • One cup shredded Parmesan
  • 1 box gluten free penne or pasta of your choice
  • 2 tablespoons gluten-free flour
  • Chopped basil for garnish 

Directions

  1. In a small bowl, combine the mushroom seasonings: paprika, salt, Italian seasoning, and black pepper.
  2. Heat the sun-dried tomato oil in a large skillet over medium heat. Add the mushrooms to the pan and season with the prepared mix. Cook for 4-5 minutes, allowing the mushrooms to soften.
  3. Cook the Pasta: While the mushrooms are cooking, boil the pasta according to the instructions for al dente. Drain and set aside.
  4. Push the mushrooms to one side of the pan. Add the Basil Infused Olive Oil and melt the butter over medium-low heat.   5. Slowly pour in the vegetable broth and heavy cream, stirring continuously. Add the spinach and cook until the sauce thickens and the spinach wilts, about 5 minutes. Stir in the Parmesan until creamy. Add the cooked pasta, tossing gently to coat. Serve immediately with chopped basil for garnish.
